Salmon Bites:

  • 1 tsp paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

For the Bang Bang Sauce:

  • 1/4 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha sauce (adjust to your spice preference)
  • 1 tbsp honey
  • 1 tsp rice vinegar (optional, for extra tang)
  • 1/2 tsp garlic powder
  • A pinch of salt

Instructions

1. Prepare the Salmon:

Start by patting your salmon fillets dry with paper towels. This step helps to ensure the coating sticks and crisps up nicely. Once dry, cut the salmon into bite-sized cubes, about 1-inch pieces. This size is perfect for getting crispy edges and tender inside with each bite.

2. Make the Coating:

In a shallow bowl or plate, combine the panko breadcrumbs, garlic powder, paprika, salt, and pepper. Toss to combine. The panko breadcrumbs will create a crispy texture, while the garlic powder and paprika add depth of flavor.

3. Coat the Salmon:

Drizzle the olive oil over the salmon pieces. This will help the breadcrumbs adhere to the salmon and crisp up in the air fryer. Then, gently toss the salmon pieces in the breadcrumb mixture, making sure each bite is fully coated.

4. Preheat Your Air Fryer:

You can check doneness with a fork—it should flake easily.

6. Make the Bang Bang Sauce:

While the salmon is cooking, it’s time to make the bang bang sauce. In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha sauce, honey, rice vinegar (if using), garlic powder, and a pinch of salt. Taste the sauce and adjust the sweetness or spiciness to your preference. If you like it spicier, add more sriracha!

7. Toss the Salmon in the Sauce:

Once the salmon bites are cooked to perfection, transfer them to a large bowl. Pour the bang bang sauce over the salmon bites and gently toss to coat them evenly. Make sure each piece is generously covered in the creamy, spicy sauce.
