  • 3 cups low-sodium vegetable or chicken broth (ensure halal)
  • 1 medium sweet potato, peeled and diced
  • 1 red bell pepper, sliced
  • 1 cup baby spinach (or other leafy greens)
  • 1 tablespoon soy sauce (or coconut aminos for gluten-free)
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)
