Fresh Veggie Sandwich

  • Author: Rayne
  • Total Time: 15 minutes

Ingredients

Scale

  • 4 slices of whole-grain bread (or any bread of your choice)
  • 1 ripe avocado, mashed
  • ½ cup hummus (store-bought or homemade)
  • 1 medium cucumber, thinly sliced
  • 1 large tomato, thinly sliced
  • 1 cup mixed lettuce (spinach, arugula, or romaine)
  • 1 small red onion, thinly sliced
  • ½ cup shredded carrots
  • 2 tablespoons olive oil (optional, for drizzling)
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • A pinch of chili flakes (optional, for added heat)
  • Fresh herbs like parsley or cilantro for garnish (optional)

Ingredient Highlights

  • Whole-Grain Bread: Whole-grain bread provides fiber, which is essential for digestion and can help keep you feeling full longer.
  • Avocado: Avocado is packed with healthy fats and adds a creamy texture to the sandwich, making it rich and satisfying.
  • Hummus: Hummus adds a creamy, savory flavor to the sandwich while providing a good source of protein.
  • Cucumber: Fresh cucumber slices add a refreshing crunch and are rich in hydration and low in calories.
  • Lettuce: The lettuce offers a crisp and slightly bitter flavor, which contrasts nicely with the sweetness of the carrots and tomatoes.
  • Carrots: Shredded carrots provide a touch of sweetness and are rich in vitamin A.

Instructions

Prepare the Veggies and Spread:

  1. Prepare the Vegetables: Wash and peel (if needed) the cucumber and carrot. Slice the cucumber and tomato thinly, and shred the carrot. Slice the red onion as thinly as possible to avoid overpowering the flavor of the other ingredients.
  2. Mash the Avocado: Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Mash the avocado with a fork and add a squeeze of lemon juice to prevent browning. Season with a pinch of salt and pepper.
  3. Spread the Hummus: If you’re using hummus, stir it well and set it aside for spreading.

Assemble the Sandwich:

  1. Toast the Bread (Optional): If you prefer a toasted sandwich, lightly toast the slices of bread to your liking.
  2. Spread the Avocado: On one slice of bread, spread a generous layer of mashed avocado.
  3. Add the Hummus: On the other slice of bread, spread a generous amount of hummus.
  4. Layer the Veggies: On the avocado-spread bread, layer the cucumber, tomato, shredded carrots, red onion, and lettuce in an even layer. Feel free to mix and match vegetables depending on your preference.
  5. Drizzle with Olive Oil: If you like a bit of extra flavor, drizzle a small amount of olive oil on the veggies.
  6. Season: Sprinkle a little salt and pepper, and if you enjoy a little heat, a pinch of chili flakes will add a spicy kick.
  7. Top with Fresh Herbs: Add a sprinkle of fresh parsley or cilantro for a burst of flavor and color.

Complete the Sandwich:

  1. Close the Sandwich: Place the second slice of bread on top, hummus side down, to close the sandwich.
  2. Cut and Serve: Use a sharp knife to cut the sandwich in half or quarters for easy serving.
