  • Author: Rayne
  • Total Time: 2 hours

Ingredients

Scale

For the Brownies:

  • 1 cup unsalted butter (melted): Provides the rich, fudgy texture for the brownies.
  • 1 ½ cups granulated sugar: Adds sweetness to the brownies.
  • 3 large eggs: Gives structure and moisture to the brownies.
  • 1 teaspoon vanilla extract: Enhances the flavor of the chocolate.
  • 1 cup all-purpose flour: The base for the brownie batter.
  • ½ cup unsweetened cocoa powder: Gives the brownies their rich chocolate flavor.
  • ¼ teaspoon salt: Balances the sweetness and brings out the chocolate flavor.
  • ½ teaspoon baking powder: Helps the brownies rise slightly for a soft yet fudgy texture.

For the Fresh Raspberry Buttercream:

  • 1 cup unsalted butter (softened): Forms the base of the buttercream.
  • 2 cups powdered sugar: Sweetens the buttercream.
  • 1 teaspoon vanilla extract: Enhances the flavor of the buttercream.
  • ¼ cup fresh raspberries (mashed): Adds the fruity tang that complements the richness of the chocolate.
  • 12 tablespoons heavy cream or milk: To achieve the desired consistency for the frosting.
  • Pink food coloring (optional): To give the buttercream a beautiful pink hue for a festive look.

Optional Garnish:

  • Fresh raspberries: To top the brownies and add an extra burst of flavor.
  • Shaved chocolate or chocolate chips: For an extra chocolatey touch.
  • Chopped pistachios or almonds: For a crunchy contrast.

Instructions

FIRST STEP: PREPARE THE BROWNIE BATTER

  1. Melt the Butter: Begin by melting the butter in a medium-sized saucepan over low heat. Once melted, remove from the heat and allow it to cool slightly.
  2. Mix the Wet Ingredients: In a large mixing bowl, whisk together the melted butter and granulated sugar until the mixture is smooth and creamy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. Combine the Dry Ingredients: In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder. This ensures that the dry ingredients are evenly distributed and will create a smooth brownie batter.
  4. Mix the Wet and Dry Ingredients: Gradually fold the dry ingredients into the wet mixture using a spatula or electric mixer on low speed. Be careful not to overmix. The batter should be thick and fudgy.
  5. Prepare the Baking Pan: Preheat your oven to 350°F (175°C). Grease and line a 9×9-inch square baking pan with parchment paper or foil, leaving some overhang for easy removal.
  6. Bake the Brownies: Pour the brownie batter into the prepared pan, spreading it evenly. Bake for about 30-35 minutes, or until a toothpick inserted into the center comes out with only a few moist crumbs attached (not wet batter). Let the brownies cool completely in the pan on a wire rack before cutting them into heart shapes.

SECOND STEP: PREPARE THE FRESH RASPBERRY BUTTERCREAM

  1. Mash the Raspberries: In a small bowl, mash the fresh raspberries with a fork or potato masher until you have a thick puree. Strain the puree through a fine mesh sieve to remove the seeds, pressing gently with a spoon to extract the juice.
  2. Cream the Butter: In a large mixing bowl, beat the softened butter with an electric mixer until it’s light and fluffy. This will take about 2-3 minutes.
  3. Add the Powdered Sugar: Gradually add the powdered sugar, about ½ cup at a time, beating well after each addition. Continue until all the sugar is incorporated, and the buttercream is smooth.
  4. Incorporate the Raspberry Puree and Vanilla: Add the raspberry puree, vanilla extract, and a pinch of salt to the buttercream. Mix well until fully incorporated. If the frosting is too thick, add 1-2 tablespoons of heavy cream or milk until the buttercream reaches your desired consistency. If you want a deeper pink color, add a drop or two of food coloring.

THIRD STEP: CUT AND FROST THE BROWNIES

  1. Cut the Brownies into Heart Shapes: Once the brownies are completely cooled, use a heart-shaped cookie cutter to cut them into individual brownie hearts. Carefully remove the brownie hearts from the pan and place them on a plate or tray.
  2. Frost the Brownie Hearts: Using a small offset spatula or butter knife, spread a generous amount of raspberry buttercream on top of each brownie heart. Be creative with the amount of frosting and how you decorate each one.
  3. Garnish the Brownies: For an extra touch, garnish the brownie hearts with fresh raspberries, shaved chocolate, or chopped nuts. This will add both flavor and visual appeal to the finished dessert.
  4. Serve and Enjoy: Once all the brownie hearts are frosted and garnished, they are ready to be served. These treats are perfect for Valentine’s Day gatherings, as a special dessert for loved ones, or simply as a sweet indulgence for yourself.
