Instructions

First Step: SEASON AND COOK THE CHICKEN

  1. Season the Chicken: Start by seasoning the chicken breasts or thighs with salt, pepper, paprika, garlic powder, and dried thyme. Ensure that both sides are evenly coated with the seasoning for maximum flavor.
  2. Brown the Chicken: Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat. Once the oil is hot, add the chicken and cook for 3-4 minutes on each side, until golden brown. The chicken doesn’t need to be fully cooked at this stage—just browned on the outside. Remove the chicken from the pot and set it aside.

Second Step: Sauté the Vegetables

  1. Sauté the Onion and Garlic: In the same pot, add the diced onion and garlic. Sauté for 2-3 minutes until softened and fragrant. This helps to develop a flavorful base for the dish.
  2. Add the Bell Pepper and Zucchini: Stir in the diced bell pepper and zucchini, and cook for another 2-3 minutes until they begin to soften. These vegetables will contribute a subtle sweetness and freshness to the dish.

Third Step: Cook the Orzo

  1. Add the Chicken Broth and Tomatoes: Pour in the chicken broth and diced tomatoes, stirring to combine. The broth will serve as the cooking liquid for the orzo and infuse it with savory flavor.

Fifth Step: Add the Greens and Finish the Dish
