Southern Biscuits and Gravy (Halal Version)

  • Author: Rayne
  • Total Time: 45 minutes

Ingredients

Scale

For the Biscuits:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 6 tablespoons cold unsalted butter, cubed
  • ¾ cup whole milk (or non-dairy milk)
  • 1 teaspoon sugar (optional)
  • 1 tablespoon baking soda (optional, for fluffier biscuits)

For the Gravy:

  • 1 lb Halal ground turkey sausage or chicken sausage (make sure it’s Halal-certified)
  • 1 tablespoon olive oil (or butter)
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk (or non-dairy milk)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon ground black pepper (more to taste)
  • ½ teaspoon salt (more to taste)
  • A pinch of crushed red pepper flakes (optional for some heat)

Ingredient Highlights

  • Halal Sausage: To keep this recipe Halal, ground turkey sausage or Halal chicken sausage works perfectly to mimic the flavor and texture of traditional pork sausage.
  • Buttery Biscuits: The combination of cold butter and milk creates a biscuit that’s both light and flaky while remaining rich and comforting.
  • Seasonings: Simple ingredients like garlic powder, onion powder, and black pepper create the essential flavors that define Southern gravy.

Instructions

Make the Biscuits:

  1. Preheat the Oven: Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Prepare the Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and optional sugar. Whisk to ensure everything is evenly distributed.
  3. Cut in the Butter: Add the cold cubed butter to the flour mixture. Use a pastry cutter or your hands to cut the butter into the flour until it resembles coarse crumbs with pea-sized pieces of butter remaining.
  4. Add the Milk: Pour in the milk and stir gently with a spoon or spatula until the dough just comes together. Be careful not to overmix the dough, as this can make the biscuits tough.
  5. Shape the Biscuits: Turn the dough onto a lightly floured surface and gently knead it a few times. Pat the dough into a rectangle about 1-inch thick. Use a round biscuit cutter (or a drinking glass) to cut out the biscuits.
  6. Bake: Arrange the biscuits on the prepared baking sheet and bake for 12-15 minutes or until golden brown on top.
  7. Cool: Remove from the oven and let the biscuits cool slightly while you prepare the gravy.

Make the Gravy:

  1. Cook the Sausage: Heat the olive oil or butter in a large skillet over medium heat. Add the Halal ground turkey sausage (or chicken sausage) and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. If the sausage produces too much fat, you can drain some off.
  2. Make the Roux: Sprinkle the flour over the cooked sausage and stir well to coat. Continue cooking for 1-2 minutes to eliminate the raw flour taste.
  3. Add the Milk: Gradually pour in the milk while stirring continuously to prevent lumps. Bring the mixture to a simmer, stirring frequently.
  4. Season the Gravy: Stir in the garlic powder, onion powder, black pepper, salt, and optional red pepper flakes. Taste and adjust the seasoning as necessary, adding more salt or pepper if desired.
  5. Thicken the Gravy: Let the gravy simmer for 5-7 minutes until it thickens to your desired consistency. If it becomes too thick, add a little more milk until it reaches the right texture.

Serve the Biscuits and Gravy:

  1. Assemble: Split the freshly baked biscuits in half and place them on serving plates. Spoon the creamy sausage gravy generously over the biscuits.
  2. Garnish and Serve: If desired, garnish with freshly ground black pepper or chopped parsley for color. Serve immediately and enjoy!
