  • Author: Rayne
  • Total Time: 45 minutes

Ingredients

Scale

Meatballs:

  • 1 lb (450g) ground chicken (Halal-certified)
  • 1 large egg
  • ¾ cup breadcrumbs (preferably panko for a crispier texture)
  • 2 tablespoons fresh parsley, chopped (optional)
  • 2 cloves garlic, minced
  • 2 teaspoons grated ginger (fresh or powdered)
  • 2 tablespoons soy sauce (Halal-certified)
  • 1 teaspoon sesame oil (optional)
  • 1 tablespoon honey
  • ½ teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 tablespoon olive oil (for greasing the baking sheet)

Spicy & Sweet Sauce:

  • ¼ cup soy sauce (Halal-certified)
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar (or apple cider vinegar)
  • 1 tablespoon sriracha sauce (or to taste, adjust based on your spice preference)
  • 1 tablespoon chili garlic sauce (optional, for extra heat)
  • 1 tablespoon hoisin sauce (Halal-certified)
  • 1 teaspoon cornstarch mixed with 2 teaspoons of water (for thickening)
  • 1 teaspoon sesame seeds (for garnish, optional)
  • 2 green onions, chopped (for garnish)

Ingredient Highlights

  • Ground Chicken: This lean protein provides a tender base for the meatballs. It’s a great option for those looking for a healthier alternative to beef or pork.
  • Soy Sauce: A savory, umami-packed ingredient that enhances the depth of flavor in both the meatballs and the sauce.
  • Sriracha Sauce: Adds the perfect amount of heat to the sauce, making it spicy without overpowering the sweetness.
  • Honey: This natural sweetener balances the heat from the chili and sriracha, making the sauce both sweet and fiery.
  • Rice Vinegar: This brings acidity to the sauce, giving it a tangy kick that complements the sweet and spicy flavors.
  • Breadcrumbs: These give the meatballs a nice texture and help hold them together while keeping them tender and juicy.

Instructions

Step 1: Prepare the Meatball Mixture

  1. Preheat the Oven: Start by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil to prevent the meatballs from sticking.
  2. Mix the Wet Ingredients: In a large mixing bowl, combine the ground chicken, egg, soy sauce, sesame oil, honey, and minced garlic. Add the grated ginger for an extra burst of flavor.
  3. Add the Dry Ingredients: Next, add the breadcrumbs, chopped parsley, salt, and pepper. Mix everything until well combined. You can use your hands or a spatula, but be careful not to overwork the mixture, as that could make the meatballs tough.
  4. Form the Meatballs: Using your hands, form the mixture into 1-inch meatballs. This recipe will yield about 20 meatballs, depending on the size. Arrange the meatballs evenly on the prepared baking sheet.

Step 2: Bake the Meatballs

  1. Bake the Meatballs: Place the baking sheet in the preheated oven and bake the meatballs for 20-25 minutes, or until they are golden brown on the outside and cooked through. To test if they’re done, insert a meat thermometer into the center of a meatball—the internal temperature should reach 165°F (75°C).

Step 3: Prepare the Spicy & Sweet Sauce

  1. Combine the Sauce Ingredients: While the meatballs are baking, it’s time to prepare the sauce. In a medium saucepan, combine the soy sauce, honey, rice vinegar, sriracha sauce, chili garlic sauce (if using), and hoisin sauce.
  2. Simmer the Sauce: Bring the sauce to a simmer over medium heat, stirring occasionally. Once it starts to simmer, mix the cornstarch and water in a small bowl to create a slurry. Slowly pour the slurry into the sauce, stirring constantly. This will help thicken the sauce.
  3. Adjust the Spice: Taste the sauce and adjust the heat by adding more sriracha or chili garlic sauce if you like it spicier. You can also add a bit more honey if you want to balance the heat with more sweetness.
  4. Simmer Until Thickened: Let the sauce simmer for about 5 minutes until it thickens to a syrupy consistency. Remove it from the heat once it’s ready.

Step 4: Coat the Meatballs

  1. Coat the Meatballs: Once the meatballs are cooked, remove them from the oven. Transfer the meatballs into a large mixing bowl. Pour the spicy and sweet sauce over the meatballs and toss gently until they are fully coated.
  2. Garnish: For extra flavor and visual appeal, garnish the meatballs with sesame seeds and chopped green onions. These will add a nice crunch and fresh pop of color to the dish.

Step 5: Serve and Enjoy

  1. Serve: Serve the Spicy & Sweet Firecracker Chicken Meatballs warm with your favorite sides. They’re perfect with steamed rice, a fresh vegetable stir-fry, or even on their own as a snack.
