The Best Easy Ricotta Stuffed Shells

  • Author: Rayne
  • Total Time: 1 hour 30 minutes

Ingredients

Scale

 Stuffed Shells:

  • 1 box (12 oz) jumbo pasta shells: These large pasta shells are perfect for stuffing and holding the creamy ricotta filling.
  • 15 oz ricotta cheese: The base of the filling. Choose whole-milk ricotta for a richer flavor.
  • 1 ½ cups shredded mozzarella cheese: Adds a gooey, melty texture to the filling.
  • 1/3 cup grated Parmesan cheese: Brings a sharp, nutty flavor to balance the richness of the ricotta and mozzarella.
  • 1 large egg: Helps bind the filling together and provides structure.
  • 2 tablespoons fresh basil, chopped: Adds a fresh, aromatic flavor that complements the cheese.
  • 2 tablespoons fresh parsley, chopped: Offers a fresh, herbaceous note to the stuffing.
  • 1 teaspoon garlic powder: For a savory kick.
  • 1 teaspoon salt: To enhance the flavors of the filling.
  • ½ teaspoon black pepper: To add a bit of warmth and flavor.

For the Marinara Sauce:

  • 2 cups marinara sauce: Choose a quality store-bought sauce or make your own. A rich, well-seasoned marinara is key to elevating the dish.
  • 1 teaspoon dried oregano: Adds earthy, aromatic flavor to the sauce.
  • 1 tablespoon fresh basil (optional): For extra freshness if desired.

Optional Garnish:

  • Fresh basil or parsley: For a pop of color and flavor.
  • Extra grated Parmesan: For serving on top of the baked shells.

Instructions

First Step: COOK THE PASTA SHELLS

  1. Boil the Pasta: Bring a large pot of salted water to a boil. Cook the jumbo pasta shells according to the package instructions, usually around 10-12 minutes, until they are al dente. Be careful not to overcook, as the shells will cook further in the oven.
  2. Drain and Cool: Once cooked, drain the pasta shells in a colander and rinse them under cold water to stop the cooking process. Set them aside to cool while you prepare the filling. This also helps to prevent them from sticking together.

Second Step: PREPARE THE FILLING

  1. Prepare the Ricotta Mixture: In a large mixing bowl, combine the ricotta cheese, shredded mozzarella, grated Parmesan, egg, fresh basil, fresh parsley, garlic powder, salt, and black pepper. Stir until the mixture is smooth and well combined.
  2. Adjust Seasoning: Taste the filling and adjust the seasoning if necessary. You may want to add a little extra salt, pepper, or herbs depending on your taste preferences.

Third Step: ASSEMBLE THE DISH

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). While the oven is heating up, prepare a baking dish by spreading a thin layer of marinara sauce across the bottom.
  2. Stuff the Shells: Using a spoon, carefully stuff each cooked pasta shell with the ricotta filling. Be generous with the stuffing, but try not to overfill so the filling doesn’t spill out during baking.
  3. Arrange in the Baking Dish: Place the stuffed shells in the prepared baking dish in a single layer. If necessary, arrange the shells tightly to ensure they stay upright during baking.
  4. Top with Marinara Sauce: Pour the remaining marinara sauce evenly over the stuffed shells, covering them completely. You can use all or part of the sauce, depending on how saucy you like your dish.
  5. Add Extra Mozzarella: If desired, sprinkle some extra shredded mozzarella over the top of the shells for a golden, cheesy crust.

Fourth Step: BAKE THE STUFFED SHELLS

  1. Cover and Bake: Cover the baking dish with aluminum foil to prevent the cheese from browning too quickly. Place the dish in the preheated oven and bake for about 30-35 minutes, or until the shells are heated through and the cheese is melted and bubbly.
  2. Uncover and Continue Baking: Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.

Fifth Step: SERVE AND GARNISH

  1. Garnish: Once the stuffed shells are out of the oven, sprinkle with freshly chopped basil or parsley for an extra burst of flavor and color. You can also add extra grated Parmesan on top if you like.
  2. Slice and Serve: Allow the dish to cool for a few minutes before serving to give it time to set. Slice the stuffed shells and serve with a side of garlic bread or a fresh salad for a complete meal.
